when i answer the phone and they ask for me should i respond this is she OR this is her?

This is she, if you want to sound like most people. Nice extra bonus: it is also 'proper English.'

I use "That's me." I find it more conversational.

Same here. I usually just respond with "Speaking." Quick and to the point.
