Is there a word for this lovely person with this attitude? -always says (especially around Christmas) I have enough travail in my time but looking at the abject poverty and sufferings all around I feel sooo sooo sooo blessed. Is it possible to capture the logic and pathos therein? - honest and twisted, noble and morbid, empathic and egotistic, humble and self-aggrandizing, worldly and shallow, you name it.

I think that anyone who feels blessed must compare their situation to that of others.   If they are not aware of other people's situation, their is no way to know if their own is good or bad.   It is only the current state of being.

However, to express their feeling blessed the way you describe does sound a little odd, almost funny.
