How about playing off trout genera, Salmo, Oncorhynchus or Salvelinus with a negative pre- or suf-fix? The first page resopnse the a Google query "trout Austria" (arguably) points toward the brown trout, Salmo trutta.
The caller wasn't so much against the "Trout" as he was for anything else. So the against fixes like anti-, -phobe or even mis- don't seem right. Maybe a simple exclusionary un-?

I like the middle one. It has overtones of 'encore,' 'chord,' 'synchrony,' and even 'Kronos!'
But I don't get a vote.

I suppose nothing happens, really. But most of my favorite dishes involve some kind of seafood, so I think you're missing out on some of the best flavors in the world. Taste is subjective, though, so I'm sure you're probably happy with other dishes. I could never do it, however. No Maryland crab cakes (not fish, per se, I know)? No Baja-style fish tacos? No Mediterranean frutta di mare pot? No grilled tuna collar? No fried haddock on sourdough? No hamachi sashimi? I would be terribly sad about the loss of any of those.
Also, make sure you get your Omega fatty acids somewhere if you don't eat fish. They're good for the heart and the mind. Eat flax seed, grass-fed beef (good for CLAs as well), and free-range chicken eggs. Or at least take supplements.
Anyway, I would offer the unwieldy "anapescan-omnivore" as an unlikely option. Or one could say, "I don't eat fish." I think the latter is stronger.
