What I have heard is that horseradish indeed comes from German, but from the widely-used "Meerrettich". This means "sea-radish", for reasons I don't know, but more importantly, it's pronounced MARErettich, so when the plant was introduced to English, they thought it was referring to a female horse.

There was a discussion about connection of horseradish and a penis. In fact in Russian language the word for horseradish is a slang for penis.
